Lemon Sorbet
2 1/2 cups water
1 cup plus 2 Tbsp. sugar
2/3 cups fresh lemon juice
1 tsp. grated lemon peel
- Combine sugar and water. Bring to a boil and heat for 5 minutes.
- Allow to cool for 3 minutes, then add lemon juice and peel.
- Refrigerate until cold.
- Pour into ice cream machine, run for 20-30 minutes or until desired consistency.
This is a very light dessert. Its simplicity goes well with complex meals.
